Easy vegetarian taco


For my first recipe I'd like to put one of my favorites out there, vegetarian tacos.


Ingredients:
1 large white onion
1 can stewed tomatoes
2 packages taco seasoning
2 jalapeno peppers
1 cluster fresh cilantro
1 can corn
1 package meat replacement
2 packages corn tortilla taco shells
1 bottle salsa
1 package colby jack cheese
oil
Start by dicing the onions, jalapenos and cilantro. Bring the stewed tomatoes to a simmer on the stove and place in the onions jalapenos and cilantro. Simmer these for about 4 minutes until the onions are transparent. Next place in the taco seasoning and stir to mix well. Next place in the meat substitute and saute for 5 minutes. The corn should be placed in last and stirred to mix well.

Place the shells on a ungreased pan and put into a 350 degree oven for about 2-3 minutes, just enough to get them brittle (do not brown them). Place the meat mixture into the shells, followed by colby jack cheese and the salsa.

Enjoy! These are one of my all time favorite vegetarian treats =)

Introduction

Greetings everyone, I am your humble host Kevin! I've been a vegetarian since I was 16 (I am currently 23) and have been loving every minute of it. I'm writing this blog to give other vegetarians (or soon to be converts) the strength and motivation to stay on the path. I won't be preaching to anyone here but I will be giving useful advice for motivation, awesome recipe's, stories, and how-to's! I would like to show everyone how you can enjoy what you eat even if you don't eat meat, and stay healthy doing it!!
